beef biryani
Ingredients:
For the basmati rice:
- 2 cups basmati rice
- 4 cups water
- 1 tablespoon ghee or oil
- 1 teaspoon salt
For the beef:
- 1 pound beef pieces (preferably chuck or shank), cut into 1-inch cubes
- 1/2 cup plain yogurt
- 2 tablespoons lemon juice
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon cayenne pepper (optional)
- Salt, to taste
For the biryani masala:
- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon cinnamon stick
- 1 tablespoon cardamom powder
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
Instructions:
1. Prepare the rice: Rinse and soak the rice for 30 minutes. Drain and cook with 4 cups water, ghee or oil, and salt until 70% done. Drain excess water.
2. Marinate the beef: Mix yogurt, lemon juice, garam masala, cumin powder, coriander powder, cayenne pepper (if using), and salt. Add the beef and refrigerate for 30 minutes.
3. Make the biryani masala: Dry roast coriander seeds, cumin seeds, cinnamon stick, cardamom powder, cloves, and nutmeg until fragrant. Grind into a fine powder.
4. Cook the beef: Heat oil in a pan and cook the marinated beef until browned and cooked through.
5. Assemble the biryani: In a large pot or Dutch oven, create layers:
- Rice
- Beef
- Biryani masala powder
- Repeat the layers two more times, ending with rice on top.
6. Steam the biryani: Cover and steam over low heat for 10-15 minutes or until the rice is cooked and fluffy.
7. Serve hot and enjoy!
Note: You can also make this recipe in a pressure cooker or Instant Pot for a quicker and easier preparation.
